Ingredients:
- 1 block of cheese (you can use sheep cheese, Manchego type, fresh cheese, goat cheese or any other cheese you like)
- Extra virgin olive oil
- Dried aromatic herbs (thyme, rosemary, oregano, etc.)
- Garlic (optional)
- Peppercorns (optional)
- Sterilized glass jars

Cheese preparation:
- Cut the cheese into pieces of the size you want.
- If you like, you can rub the cheese pieces with garlic or sprinkle them with dried herbs for extra flavor. You can also add a few peppercorns for an extra kick.

Preparation of oil:
- In a small saucepan, gently heat the extra virgin olive oil over low heat. Do not let it boil.
- Add the dried herbs to the hot oil. This will help the oil absorb the aroma and flavor of the herbs. You can also add a few peeled garlic cloves if you wish.
- Allow the herbs and garlic to infuse in the oil for a few minutes. Then remove the pan from the heat and allow the oil to cool slightly.

Mounting:
- Place the cheese pieces in sterilized glass jars.
- Pour the warm olive oil over the cheese, making sure to completely cover the cheese pieces. Make sure the garlic and herbs are evenly distributed in the oil.
- Allow the cheese to cool to room temperature before sealing the jars and refrigerating.

Storage:
- Store jars of cheese in oil in the refrigerator.
- Cheese in oil can be consumed after a few hours, but it becomes more flavorful if left to rest for at least 24 hours so that the flavors can blend well.
- Cheese in oil keeps well in the refrigerator for several weeks.
