Broken eggs are not only typical of Spanish cuisine, but one of the richest, most delicious, quickest and easiest dishes to make. They have it all. As for the ham, I have it prepared in very thin slices and cut them into small pieces. The Iberian ham will provide an intense and salty flavour that will contrast perfectly with the softness of the eggs and potatoes. And here comes another trick: use good quality ham. Trust me, it shows. -
Fry the potatoes
In a large frying pan, heat plenty of olive oil over medium heat. When the oil is hot, add the potatoes. Fry them until golden and crispy. This step is crucial to getting the perfect texture for your huevos rotos con jamón. Once fried, remove the potatoes and place them on a plate with absorbent paper to remove excess oil. Sprinkle a pinch of salt on them and chop one or two to see how they turned out. It's important to taste everything you cook, just in case. -

Can you cook broken eggs with other Iberian sausages?
Of course. Eggs and potatoes go very well with most ingredients. Another of the most typical recipes is broken eggs with chorizo. The only difference with ham is that, in this case, it is better to fry the chorizo. And use the same oil for the eggs, to give them even more flavor.
If you want to innovate, you can try making them with salami. There are more and more recipes that use this sausage to surprise.
