Typical hornazo from Salamanca

- 500 grams of wheat flour
- 100 ml of olive oil
- 100 ml of white wine
- 1 egg
- 1 teaspoon salt
- 60 grams of Iberian pork fat

- 200 grams of sliced Iberian loin
- 200 grams of sliced Iberian chorizo
- 200 grams of sliced Iberian ham
- 3 hard-boiled eggs
- 1 beaten egg to paint the dough
- Salt and pepper to taste

In a large bowl, mix the flour with the salt. Make a well in the centre and add the oil, white wine and egg. Knead until you have a smooth, homogeneous dough. Wrap the dough in cling film and leave to rest in the fridge for at least 30 minutes.

Preheat the oven to 180°C (350°F).

Divide the dough into two equal parts. Roll out one of the parts with a rolling pin until you obtain a sheet about 5 mm thick.

Place the rolled out sheet of dough into a round baking tin, leaving some overhang at the edges. Press the dough into the tin.

Fill the pastry base with the slices of pork loin, chorizo and ham, alternating them in layers. Cut the hard-boiled eggs into slices and place them on top of the filling. Sprinkle with salt and pepper to taste.

Roll out the other piece of dough and place it on top of the filling. Seal the edges well and trim off any excess dough.

Make a hole in the center of the dough so that steam can escape during baking. Brush the entire surface of the hornazo with beaten egg.

Bake the hornazo in the preheated oven for approximately 40-45 minutes, or until the dough is golden and crispy.

Once baked, let the hornazo cool before cutting it into portions and serving.
