The best pigs

To obtain premium hams, it is necessary to start with a careful selection of the animals.

We choose the pigs from the headers. The best ones. Those thatThey consume a higher percentage of acornsand, therefore, give rise to higher quality hams and shoulders.

In the Passion Selection there are “black seal” and “red seal” hams, but only the best of each type are allowed. Here, even the smallest detail counts.

Maturity also matters

The hams you can buy in any supermarket are “young”.

They come from animals raised on intensive farms. At a dizzying pace. They can reach their slaughter weight in just 4 months.

The animals that give rise to the Selection Passion hamThey grow up slowlyThey reach maturity in about 15 to 18 months, depending on the farm.

They live in semi-free conditions, in their natural habitat. They grow by consuming acorns, grass and natural resources.

Choosing the best Iberian pig would not be enough without taking special care of the curing or drying process.

The result of a job well done: 2018 and 2019 vintages

Each season presents different conditions.

Rainfall and temperature determine the availability and quality of natural food available to pigs (mainly acorns and grass).

Weather conditionsThey leave their mark on each vintage.

Passion Selection Vintage 2018

Ahistoric vintage, that's how we can describe it.

The 2018 vintage was characterised by the size and quality of its hams and shoulders. It was one of the best years in recent decades for the breeding of Iberian pigs.

A huge quantity and quality of acorns gave rise toHams close to perfection, like we haven't seen for a long time.

Generous in size, balanced in flavor.

Buying a 2018 Passion Selection ham means buying a small gastronomic gem.

Passion Selection Vintage 2019

The bar was set too high last year.

The 2019 vintage also came close to excellence, although the weather modified the characteristics of its hams.

It was a campaignlater and with fewer fruits available, but this translated into more land available for the animals and more time to reach the desired weight.

The 2019 conditions were not perfect weather-wise, resulting in slightly smaller pieces.

Slim, balanced and intense.

The 2019 Passión Iberian pigs had to earn their food by roaming the many hectares at their disposal.

The result? Excellent. That extra physical exercise translated into animals with “more muscle.”
