Lentils, if you want them, you eat them and if you don't, you leave them. In my house that saying didn't work, if you want them, you eat them and if you don't, you eat them for dinner. I admit that when I was little, they weren't my favorite dish, but now that I'm older and have better taste (you only have to see the convent I've chosen), lentils with chorizo are one of my favorite dishes.
Tasty, full of flavour and easy to make (and freeze to have food for the week), lentils are one of the most typical dishes of Spanish cuisine . And they are one of those dishes that take you home, to your childhood, to the warmth of your people, to the warmth of your home.
And what better way to honor this wonderful dish, and those who cooked it, than to replicate it with the highest quality ingredients. Take note of the recipe and start cooking.
Recipe for lentils with chorizo
Ingredients for 2 people (you can multiply it by 2 and have it for more days)
- 300 g of lentils
- 150 g of Iberian chorizo or Iberian sausage
- 1 onion
- 2 carrots
- 2 ripe tomatoes
- 2 cloves of garlic
- 1 bay leaf
- 1 red pepper
- 1 potato
- Extra virgin olive oil
- Sweet paprika
- Salt and pepper to taste
Steps to follow:
- Rinse the lentils under cold water and drain. Set aside in a separate bowl.
- Peel and chop all the ingredients to have them ready. You can add the chorizo in thick slices or in cubes, as you like. The same with the carrot, the potato and the pepper... The good thing about lentils is that they can be adapted very well to everyone's tastes .
- In a large pot, heat a couple tablespoons of olive oil over medium heat. Add the chopped onion and garlic and sauté until golden.
- Add the Iberian chorizo and cook for a few minutes until it releases all its juice.
- Add the carrots, peppers and potatoes. Stir well to combine all the ingredients and absorb all their flavours.
- Once done, add the chopped tomato and cook until a thick sauce forms.
- At this point, add the lentils and mix everything carefully . Pour in enough water to cover all the ingredients. If you like them more soupy, add more water.
- Add the bay leaf, a pinch of sweet paprika, salt and pepper to taste.
- Bring the mixture to a boil and then reduce the heat. Simmer until the lentils are tender and the stew has the desired consistency.
And voilà! This is how you make lentils with chorizo. Serve them with a nice piece of crusty bread and let yourself be carried away by the sensations in each spoonful.
And it's the only way to do it?
Of course not. There are as many recipes for lentils with chorizo as there are houses where they are cooked. If you are not a big fan of vegetables, you can mash them instead of leaving them whole. In addition, you will get a thicker and more substantial broth .
If you want to add a fresh touch, try adding fresh herbs like parsley, cilantro or basil just before serving. If you like intense flavours, you can add a splash of red wine when you are cooking them . And if you want a more substantial and complete dish, you can add rice or quinoa. Not only will they give you more consistency, but they will also help to better absorb all the nutrients.
